Vegetable Beef Soup
1 pound of ground beef
1 small can of whole kernel corn (drained)
1 small can of Lima beans (drained)
1 small can cut green beans (drained)
1 can sliced carrots (14.5 oz undrained)
1 can diced white potatoes (14.5 oz undrained)
1 can diced tomatoes (14.5 oz undrained)
1 can tomato sauce (14.5 oz)
1 can tomato sauce (8 oz)
1 tsp salt
1 tsp creole seasoning
1 medium onion (chopped)
Black pepper to taste
Brown the beef over medium to high heat with the onions and break it up with a spatula while cooking
Add all other ingredients and bring to a boil
Once it reaches a boil turn fire to low and simmer for about 10 minutes with the lid off while stirring occasionally
Adjust seasoning to taste and simmer for another 10 to 20 minutes while continuing to stir occasionally.
Serve it up in a bowl and go to town on it.
**You can add or omit any vegetables you want. The above combination is just what my wife and I like. Also, feel free to use frozen vegetables or mixed vegetables instead of the individual cans of each.
