Sausage Sauce Piquant


1 pound andouille sausage (If you can’t find it, use regular beef or pork smoked sausage)
2 tablespoons cooking oil
2 tablespoons flour
1 medium onion, chopped
1 can diced tomatoes (16 oz)
2 cups water
Salt, (I start with 2 heavy pinches but I like things pretty salty) black pepper, and creole seasoning to taste
Cooked Rice


Brown the sausage, drain, and set aside
Heat the oil and add flour… stir constantly over low to medium fire until the flour is browned
Add onion and saute’ for about 3 to 5 minutes
Add sausage, and all other ingredients and bring to a low boil
Lower fire, cover and simmer for 1 hour stirring occasionally

*after first 30 minutes of simmer, taste to see if more salt, pepper, or creole seasoning is needed then finish simmering

Serve over rice

Makes 4 to 6 servings
