Mexican Corn Dip


3 cans of Mexican style corn (drained)
1 (12oz) jar of diced jalapeno (drained)
One and a half pounds of shredded Mexican Blend cheese
16oz sour cream
1 cup of mayonnaise
1 bunch of green onions (chopped) … Optional – if you don’t use onions, you may want to add a little onion powder to taste
Salt to taste


Mix everything together in a large bowl except jalapenos

Add half the jalapenos and taste to check spiciness. If you can handle more spice then add the rest of jalapenos. (I used about 3/4 of the jar)

Salt to taste

Serve with large Fritos Scoops or sturdy tortilla chips
