Cajun Pasta


1 pound smoked beef or pork sausage cut into bite sized pieces (I used andouille)
1 pound Rotini pasta
1/2 medium yellow onion finely chopped
2 cups heavy cream
1 1/2 teaspoons of cajun seasoning
1/2 cup grated parmesan cheese


Cook past according to the directions on the box, drain, and set aside

Brown the sausage in a stock pot over medium/high heat

Remove sausage and place onto paper towel lined plate

Add onion to the sausage grease that is remaining in the pot and saute until softened

Put sausage back in with cream and cajun seasoning and stir well

Reduce heat and simmer on low for about 3 to 5 minutes until sauce starts to thicken a little bit

Take the sauce off the heat and stir in parmesan cheese

Put cooked pasta in the pot and stir around to make sure all the pasta gets covered in the sauce

Now eat it and marvel at how delicious it is
