Jambalaya

Ingredients

2 lbs Andouille, Beef Smoked Sausage, or Pork Smoked Sausage cut into bite sized pieces

5 lbs chicken thighs (bone in with skin)

2 Tbsp Kitchen Bouquet or other liquid browning sauce (it’s in the gravy aisle at the store)

2 1/2 tsp salt

1/4 tsp Cayenne Pepper (Red Pepper)

1 tsp black pepper

2 Tbsp dried parsley flakes

2 cups white rice

2 medium yellow onions (chopped)

4 cups of chicken broth made from reserved broth

Vegetable oil
 
 
Instructions

Boil chicken in a large pot for 45 mins (start timing when the water begins to boil)

Remove chicken and save the broth

After chicken has cooled, remove chicken from the bone and put aside

Cover the bottom of a large pot with oil and brown the sausage

Remove the sausage onto a paper towel lined plate and sauté the onion in the oil until soft

Add sausage and deboned chicken back to the pot

Put in the rest of the ingredients and stir it well

Raise the fire and bring to a fast boil

As soon as it reaches the boiling point turn the heat to low, cover the pot, and cook for 10 minutes

Turn off the heat and let it sit for at least 35 minutes

DO NOT remove the lid until time is up
