Ham & Shrimp Bisque

Ingredients

4 strips bacon (cut into bite sized pieces)
2 Tablespoons olive oil
1 teaspoon Cajun seasoning salt
2 cups diced ham
1 large onion, diced
2 cloves garlic, minced
8 ounces cream cheese
1 can cream-style corn (14 oz)
1 can diced tomatoes (14 oz)
1 can cream of shrimp soup (10 oz)
1 can cream of mushroom soup (10 oz)
2 cups half and half
3/4 cups water
1 pound medium shrimp, peeled, deveined, and rinsed
2 Tablespoons fresh parsley, chopped
Salt to taste

Directions

Brown bacon pieces in a large Dutch oven or pot over medium heat
Drain bacon onto a paper towel leaving as much of the grease as possible in the pot
Add the olive oil, ham, onion, and Cajun seasoning salt and saute’ until onion is translucent
Add garlic and browned bacon pieces and cook for 1 minute
Stir in cream cheese until it melts and incorporates with meat and onions
Add corn, tomatoes, soups, and half and half… cook for about 10 minutes, stirring constantly
Add 3/4 cups of water, turn up the heat, and bring to a light boil
Taste to see if seasoning needs to be adjusted and add salt or more Cajun seasoning if you’d like
Add shrimp and bring back up to a light boil. Then reduce heat to a low simmer for 10 minutes (stirring frequently to keep it from sticking)
Stir in the parsley and keep simmering for another 5 minutes
